1-Spinach And Goat Cheese Omelet

 

INGREDIENTS

•¼ medium onion
•2 tablespoons butter
•1 large handful of spinach
•3 large eggs
•2 tablespoons heavy cream
•1 ounce goat cheese
•1 medium spring onion, for garnish
•Salt and pepper to taste

Directions

Slice the spring onion into long strips. In a frying pan, sauté the onion in butter until caramelized. Add the spinach to pan and allow to wilt. Remove the vegetables from the pan to a bowl and add the eggs, cream, and salt and pepper together. Beat
until well mixed. Pour the egg mixture into the pan and cook over medium to low heat. Once the edges of the omelet begin to set, spoon goat cheese over the omelet. Fold over the omelet and cook for a minute longer. Remove to a plate and garnish with diced spring onion.

2-Zucchini Hash Browns

 

INGREDIENTS
•2 medium eggs, slightly beaten
•1 cup shredded zucchini
•1 teaspoon garlic powder
•1 teaspoon onion powder
•Salt and pepper to taste
•1 tablespoon butter
 

Directions

Melt the butter in a skillet. In a bowl, mix together the zucchini, eggs, salt, pepper, garlic powder, and onion powder. Drop the zucchini by spoonfuls into the hot skil- let. After browning on one side, flip and brown the other side. 

3-Cinnamon Microwave Muffin


INGREDIENTS

•2 teaspoons plain yogurt
•1 egg
•1 teaspoon cinnamon
•3 tablespoons ground flaxseed
•½ teaspoon baking powder
•1 teaspoon Splenda or stevia

 

Directions

Grease a ramekin. Whisk together the egg and sweetener, then add the yogurt and blend well. Mix in the ground flaxseed, cinnamon, and baking powder. Pour the batter into a ramekin and microwave on high for 1 minute 30 seconds. Makes 1 serving. 

4-Egg Crepes 

 

INGREDIENTS

•2 tablespoons heavy cream
•2 large eggs
•1 teaspoon butter

Directions

Blend the cream and eggs together in a blender. Melt the butter in a pan. Pour the egg mixture into the pan. When it starts to pull away from the edges, carefully flip with a spatula. Slide the finished crepe onto a plate. Season with cinnamon. Makes 1 serving.
