1- Crispy Cheddar Crisps  


INGREDIENTS

•4 tablespoons cheddar cheese, shredded
 

Directions

Preheat oven to 375 degrees F. On a cookie sheet lined with parchment paper, drop a tablespoon of the cheese into four separate piles, separated by at least 2 inches. Bake for 10 to 15 minutes. Remove from oven and let cool for 10 to 15 minutes. Loosen from cookie sheet with a knife. Makes 4 crisps.

2-Cheesy Chive Rollups 


INGREDIENTS

•6 slices of ham
•Half of an 8 ounce package chive and onion cream cheese
•6 slices of thin Swiss cheese
 

Directions

Thinly spread the cream cheese over the ham slices. Place a slice of Swiss cheese on each slice of ham. Starting from the cheese side, fold the end of the ham over the end of the cheese then tightly roll the ham and cheese up. Secure with a tooth- pick, if desired. Makes 6 servings.

3-Jalapeno Poppers

 

FILLING INGREDIENTS

•6 thick cut bacon slices
•4 ounces cream cheese
•4 ounces cheddar cheese, shredded
•1 ½ ounces jalapeno slices
 

Batter Ingredients

•2 eggs
•4 tablespoons almond flour
•2 tablespoons Parmesan cheese
•1 tablespoon water
 

Directions

Cook the bacon and crumble into small pieces. Slice the jalapeno peppers, dis- carding the seeds. Combine the bacon, cream cheese, cheddar cheese, andjalapeno slices. Form into 20 balls and refrigerate. While the balls are cooling, whisk the eggs, then add the almond flour, Parmesan, and cheese. Coat the balls with the egg mixture and refrigerate again for 30 minutes. Then heat oil in a
saucepan, drop the balls into the oil, and fry the balls until golden brown. Makes 4 servings.

4-Pistachio Goat Cheese Balls

 

INGREDIENTS

•3 ounces soft goat cheese
•2 diced figs
•30 kernels pistachios, crushed
•¼ Serrano pepper, finely diced
•1 teaspoon white pepper
•1 tablespoon chopped chives
 

Directions

Using a fork, mash everything except the pistachios into the goat cheese. Form tea- spoon-sized balls with the goat cheese mix. Place crushed pistachios in a small bowl. Roll the goat cheese balls in the nuts. Serve with sliced cantaloupe and/or
frozen grapes. Makes 12 servings.
